Joe’s Favorite Meatloaf

5               pounds lean ground beef

1               cup peeled, minced carrot

1/3          cup minced celery

1               cup minced onion

1 1/3      cups Hali’imaile Barbecue Sauce, plus additional sauce

1               teaspoon freshly ground black pepper

1               tablespoon salt

1               teaspoon finely chopped fresh thyme

5               cloves garlic, minced

6               eggs

1)              Preheat the oven to 350 degrees F.

2)              To prepare the meatloaf, place the ground beef in a large mixing bowl and break it apart. Add all the remaining ingredients and mix well. Form two loaves (or any other shape you like) and place in an ungreased baking dish. Baste with a bit more barbeque sauce, and bake for 45 minutes.

3)              To serve, heat extra barbecue sauce to ladle over each serving of meatloaf.

Hali’imaile Barbecue Sauce

2               tablespoons margarine

2               onions, chopped

3               cups ketchup

1 ½          cups canned red chile sauce

½              cup cider vinegar

½              cup firmly packed brown sugar

1/3          cup yellow mustard (any brand)

1/3          cup dark molasses

2               teaspoons cayenne pepper

1/3          cup Worcestershire sauce

2               teaspoons liquid smoke

Juice of ½ lemon

Juice of ½ lime

Juice of ½ orange

Salt & Freshly ground pepper

1)              To prepare the sauce, in a heavy saucepan, melt the margarine over medium heat. Add the onions and sauté for 5 to 6 minutes, until translucent. Add all the remaining ingredients, stir to blend, and bring to a boil. Decrease the heat and simmer, uncovered, for 2 hours, until thick and reddish brown.

Makes about 6 cups
